I would strongly, highly voice my opinion for an email-based solution.
I'm not going to install slack or any other messenger on my phone, and when
not on my work computer never check slack. (I refuse to install it on my
personal machines, being not-free software.) (And besides, as others
pointed out, searching in slack is terrible.)
Is there a specific need or reason for changing? If there is, can we
discuss it? Otherwise I feel like we're simply bikeshedding. I think our
current solution works well. The lack of attachments on a
large-many-of-people list like this is a plus in my opinion.

Before posting a list of options to replace a mailing list which is
already working and IRC which is also working, explain why moving would
improve things.
Slack is awful for searching past discussions. One thing I like about
Google Groups is that the entire history is searchable after you log in
to google, so it's easy for a new member to find out "how did we fix
this thing three years ago?" We've been using google groups for
lasersaur for several years now and it's a bit like having a USENET
server with an infinite history.
