2 options:
1) Export the Unicode PST data from Outlook to an ANSI pst... See at the
bottom of here:
http://support.microsoft.com/default.aspx?scid=kb;en-us;823176
Then fedex it to the server and exmerge it in.

Or
2) Create the new Exchange profile and import the PST using Outlook.
