Witht he right controller you can do any or all of those things. I won't

hi all. i have a few questions about midi controlers. if any of them seem a
bit stupid please forgive and bare with me. firstly i'd like to know if one
can control your plugins in sonar like the sonodis plugs and any other vst
plugs like amp simulation etc with the sliders an nobs on the controler?
then i'd like to know if one can control only midi tracks with the controler
or can you also control things like pan and volume on audio tracks. then
lastly i wondered if some of you use edirol controlers like the pcr800?
