Exactly, like you wrote, with polyphonic sound it's less accurate.
Though, The way this is advancing probably in a couple of years we are talking
of converting perfectly a entire band to midi!
The Mellodyne software already recognizes polyphonic recordings and alouds to
make adjustments, should be able to do it.
Unfortunately it's very graphic!
