SPICY REFRIGERATOR PICKLES Makes 1 quart 12 servings, 1/4 cup, 18 calories each Diabetic Exchanges: free Put in glass or plastic bowl: 3 medium cucumbers, sliced 1/8 inch thick or cut into spears Sprinkle liberally with: salt Toss. Cover and refrigerate 30 minutes. Combine and set aside: 1 cup boiling water 2 Tbsp mixed pickling spice Rinse salt from cucumbers with cold water and drain. Return cucumbers to bowl along with pickling spice and: 1 small onion, thinly sliced 1 clove garlic minced 3/4 cup unsweetened apple juice or cider 2 Tbsp cider vinegar 5 packets Equal sweetener Stir to blend. Cover and refrigerate at least 24 hours before serving. Pickles keep for 1 week.
