CRISPY COCONUT BREADED CHICKEN MAKES 4 SERVINGS. 3/4 cup sweetened shredded coconut 1/4 cup bread crumbs 3 green onions, chopped 1/2 cup flour 1 egg 8 chicken cutlets Salt and Pepper 4 tbs oil In a bowl, combine coconut, breadcrumbs and green onions. Place flour in a second bowl. Beat egg with 1 tbs water in a third. Season chicken with 1/4tsp each salt and pepper. Dip each in flour, then egg, then coat in coconutmixture. *HEAT 2 tbs oil in a skillet. Add half the cutlets, cook untilgolden brown and cooked through, transfer to a plate.
