As the founder and owner of the blind cooks mailing list, which I assume is
what you're asking about, I should probably put my two cents in as well.
The idea behind this list is that people who are blind or have low vision,
who also enjoy cooking, come together to discuss cooking and recipes in such
a way as to help each other get around the various hurdles in the kitchen
and in cooking that blindness and low vision put in our way. Someone may
come here and ask the members of the list how they can tell when a fried egg
is sunny side up, for example. And if anyone on list has an answer they
think will help that person, they're invited to share it so that we all may
benefit. We also exchange recipes here, but the emphasis is on those
recipes that members have actually made and turned out well enough to share
and recommend to others.

There's a small section on cooking in the downloadable book If
Blindness Comes, from www.nfb.org.
There's a book called Cooking With Feeling that comes as a
downloadable .brf file and costs $9 or so from www.nbp.org--look in
their bookstore. The book has a two-volume section covering
techniques.
And there's _this list ... great bunch of people who are patient,
friendly, and willing to answer newbie questions without giving the
asker that why-don't-you-know-this-already,-what's-wrong-with-you
look, and who've inspired me to try new things and move forward to be
not so fearless in the kitchen.
