how do you record on to the indevidual tracks? and then mix down?

Assuming you have two or more individual tracks in Audacity, use the up or down cursor arrows. Window Eyes says the name of the track such as "track 1 selected" or "track 2". (I don't know about JAWS.) To select or unselect a specific track, press the enter key. Audacity announces through the screen reader either the track name selected or just the track name, which means unselected.
