I just installed Exchange 2003 on Windows 2003. I suggest 8 drives. 2 mirrored for OS, 2 mirrored for Transactions Logs, 4 Raid 5 for Store. With the store the more drives the better although depending on your load 3 maybe just fine. Also keep in mind that SP2 for Exchange Std will increase your store limit from 16GB to 75GB so plan for expansion.
