If you are using SQL,  Yes.  You can have multiple Datastore co-located on one 
SQL Server.

Can we have citrix XP database (subsidary)and Citrix PS4.0 database (Subsidary) 
in a singel server?

Envirionment: 

Database server # Windows 2000 /SQL 2000 

Farms = 2 , one = citrix XP, two= Citrix PS4.0
