in my scenario, i'm specifically looking at how to keep MS Office patched that I have installed into AIE. I have 1 server running both office 2000 and officexp and i want to make sure that i can remain up to date. is the method that you described a fit for this?

You can still back out of a hotfix, but it involves remving the patch and then rerunning the REINSTALLMODEprocess.
The advantage of the second approach is that the patch rollout is faster than the "standard" (1) patching method and it has the further advantage from your viewpoint that it's fairly easy to update files in an AIE. Worst case is updating (reinstalling) the AIE with the updated admin install image.

apps installed into AIE? Not just service packs, but what about regular
patches?
