I've actually heard of this before.  Here's a link to one story and there

Subject: [texbirds] Lesser Goldfinch diet

This spring in my back yard I left unmowed a patch of weeds and volunteer 
sunflowers and other sprouted bird seed.  It attracted, among other birds, 
Lesser Goldfinches.  One day I observed them eating not the sunflower seeds, 
not insects or other delicacies ON the leaves, but the leaves themselves!
One sunflower plant is completely stripped of leaves.

What is the meaning of this outrage?
