Gentle Members may find it easier to keep upright by following the excellent advice from the Food Safety Project. "Iowa State University Extension believes that resources are needed for consumers, educators and students to access research-based, unbiased information on food safety and quality. The goal of the Food Safety Project is to develop educational materials that give the public the tools they need to minimize their risk of foodborne illness. . . It's the season for preparing turkey, stuffing, leftovers -- and for questions about how to cook, serve, and store your holiday feast. Although much of the information may already be known by experienced cooks, safety may lie in the details covered at the site. Helpful guidelines for thawing a frozen turkey, testing for when a turkey has been properly roasted and safely storing leftovers are included. The "Ask a Food Safety Expert" link reveals why it's downright dangerous to roast a turkey overnight at a low temperature.
