I like clay, mica, & oxides myself .. I've never used the liquid dyes but know many people who do and are very happy with the results .. Not sure if you were thinking to add the brewed coffee or ground beans, but the scent of coffee won't come through in your soap unless you add the fragrance or essential oil (referring to cold or hot process not m&p which I know nothing about), and it will discolour .. That said I don't find the grounds bleed their colour much, and It's a nice additive in kitchen bars as coffee absorbs scents, plus the ground beans are a good exfoliant to remove dough, gardening dirt etc ..
