In the case of hands, you can also cross staff beam things.  Select the
notes you want on the hand opposite the staff your on and press control
shift down-arrow.  You'll sometimes needs sighted assistance to make sure
that the stems are not too short when this device is used.  Also, as a
pianist, I can say that most intelligent pianists will make the right
decisions as to which hands should play what regardless of what the score
says.

Beam notes for the right hand up and those for the left hand down. Write RH.
for right hand and LH. for left hands the first couple of times.

Look for glissandos.
