        I found it.  There's actually an honest-to-God specific instrument
change under "Other" in the Create menu.

Kevin, if you use the correct text type (I think it's the expression text?) 
and put in an instrument name that is standard, Sibelius (and the performer)

will both be able to change instruments. It's a pretty neat feature of 
Sibelius.
