Lots of dogs can go coursing.  Still, it is a sighthound sport, and the 
dogs most commonly used on live prey are whippets and greyhounds. 
    Seeing dogs doing what they were bred to do is a beautiful thing to 
see...unfortunately, not all dogs were bred to do peaceful things like 
herding sheep.  
    Of course, you're hearing this from a former foxhunter...who learned 
early on to avert her eyes on the rare occasions when hounds actually 
hit on the fox.
