Typically, in Mac Mail, you go to 'Mail' (top left menu bar), click 'Preferences', click 'Composing', and under 'Message Format', select 'Plain Text'. It might depend on what version of the Mac OS you are running but I suspect that, with a little poking around, you will find the 'Plain Text' selection.

You are sending formatted text. See if there is a setting in the mail client for "qouted printable". If its turned on turn it off and see if that makes a difference. Also, see if there is a setting for "send in plain text". I get this stuff fine on a PC although the change in text size is a bit disturbing. In the raw message one can see a lot of encoded stuff following the message. This makes the message size at least double what plain text would be.
