This is a common problem. To make a start is the most difficult step.
Once you are into it, it becomes a self-runner.

Better add 30 mm in front, because the longer the drivetrain is, the better.
700C does not say much to me. I am used to wheel data like 45-559 or 28-622
which is the ERTRO Norm.
