Hello Klaus,
there are two problems here...
First, it looks like the server is very slow, it receives the acks from the
client but does not
recognize them in time so it starts to poll for a retry.
Retries make the mode switch down until communication is established both ways.
Does the server have high CPU load?
The second problem is that the mode scanning is not operating.
For this you must set
$scanner = 'S';
in the .pskmail/pskmailrc.pl config file.
And of course you need the .pskmail/qrg/freqs.txt file to contain
frequencies and modes.
Here is the content of the freqs.txt file of PI4TUE:

PSK500R,PSK500R,PSK500R,PSK500R,PSK500R,

Even when the server is not scanning frequencies, it still needs to scan modes.

Hi!
I'm about to start a PSKMail server on 14107 MHz. Right now server and
client operate locally only on dummy loads.
It's basicly working (APRS Igate, Mail in, Mail out), but:
In spite of good signal strength communication is always switching down
and ending up in MFSK-32. The server will stay in this mode after ~QUIT
/ ~ABORT.
Any hint from the experienced?
