Have you tried the ArrayToList feature? It's discussed in the docs in the 
"Formatting Your Data" chapter. I don't know what type of form fields you're 
using so I'm presuming it's checkboxes, one for each color. The doc's example 
happens to use $Colors as an example and I'm pretty sure one of the sample 
forms uses color choices as well.
