I think you hit on a great solution! 

I originally asked the question because I wanted different ack pages for 
people who want to pay by check and for people who wanted to use PayPal. I 
scrapped that idea and went with one ack page for both since I figured some 
people would change their minds and decide to pay by the other method. I 
simply put instructions on the ack page for the payment methods (and a link to 
PayPal). The email they receive to acknowledge the order has check payment 
instructions included.
