From memory, existing documents are opened in the display mode they were in when they were saved. If you create a new document in Word, it'll probably start with the display format that your selected template has, but I've never looked at this as such. You might need to do some resaving of documents and templates with display mode set differently before you are free of this. Personally, I try to remember never to save a document in multi-page view unless I specifically want that view active when I next open the document.
