Open the mail and right-click on sender name address on the "From: " line
of the header. The option to Add to Contacts will appear then.

-- Friends,
--
-- In Outlook 2000, I can't find a way of adding a contact to
-- the Contacts list
-- from a received mail (OE appears to do this automatically).
-- I would like to
-- be able to right-click a mail in the inbox and select "Add
-- sender to Contact
-- List", lol.
