I have the same "affliction" (if it can be called that), but I have blamed the cause on having dual and triple monitors. I don't remember it happening when I just the one monitor. I drag one window between monitors a lot. If you find a reason cause, let me know please. Normally when I open word or outlook the window opens to full screen. Every once in a while, "Suddenly" they open up not maximised and I have to maximise them and then they are okay again for a time. This is days, weeks, sometimes months. It's just happened again and I thought I'd ask if anyone knows what's going on.
