You may be editing the document with revision tracking turned on.

In the status bar at the bottom of the Word window, is the word TRK
enabled? On the Tools menu, does the Unprotect command appear?

If track changes was turned on by accident, you should be able to turn
it off by double-clicking on the TRK button in the status bar, or by
clicking Tools > Track Changes > Highlight Changes, then clearing the
Track Changes While Editing check box.

If you can't do that, then the document was protected so edits would
appear as tracked changes. You may be able to click Tools > Unprotect to
turn off tracked changes.

If, however, you are a reviewer, the author has arranged for your edits
to be tracked, and you would be discourteous to reverse this decision
without consulting the author.
