Hi Sam, the only way that I know of that this can be done is to check the check box that says automatically interact when tabbing, I believe it is in navigation under voice over utilities. You can also turn on quick nav by pressing the right and left arrows together, then press enter to open a message, and press the right arrow to read the whole message. I think, the reason why the headers weren't automatically being read was that you had somehow interacted with the message table.
