There is a hot key option for all that, I just can’t remember what it is,
and I change that setting so infrequently that I just do it through the
utility anyways.
For the track pad, you can turn off track pad commander by holding the VO
keys and doing arotor gesture on the track pad, with two fingers on the
track pad rotate counter clockwise like you are turning a rotor or dial. You
should hear track pad commander off.
There is also a way to do that through the Voiceover utility, but I find the
gesture easy enough to remember.
