[macvoiceover] VoiceOver turning off accidently on the iTouch

Hi all. On two occasions, I have been in an application and have pressed
the button at the bottom of the iTouch to go back to the home screen and the
following message has been spoken.
VoiceOver off.
Now, that's really a wake up call. I have pressed the button 3 times to
turn VoiceOver back on. I have set the preferences to have it do this.
Nothing happens. At length, I have fiddled around with it and have gotten
the voice back, but I have a question.
How do you turn on VoiceOver from within iTunes with the iTouch connected.
I had someone do it visually when I got my unit, but this would be a nice
thing to know the next time this happens. Any help is appreciated.
