Are you using an external keyboard with your iPhone, or just the on-screen
system keyboard?
There is an option to add text selection as a rotor item in iPhone. You do this
in settings/general/accessibility/Voiceover. Once it’s addedyou rotor to the
option, then flick up or down to tell it what type of selection you want to do,
word, character, line etc. then you swipe right or left to make your selection
before rotoring to the edit menu to copy, assuming that’s what you’re looking
to do.
I haven’t used text selection in the Kindle app, but it works well for other
apps.
Good luck.
