You can set Text Edit to plain text instead of rtf, that might do it.

I’m setting up my wife’s and my website. I’ve tried writing HTML by hand in
Notes and in TextEdit. However, in both cases, I get weird characters in the
resultant code, when I view it after it’s uploaded by FTP to the server.
Isn’t there a simple editor that will allow me to type in HTML and let me
save an HTML document? Or, barring that, save a TXT document in the right
directory, and change the extension by hand later? RTF files apparently come
with embedded characters, and Notes won’t let me save to the folder where the
webpage files are being built.
Any suggestions?
