yes, when it comes to recording it seems like some other region of the brain
kicks in.
i like to set my preferences to record a number of takes, cycling between start
and end bars and repeating until i am more at ease rather than recording a take
from a cold start. then you can go into the take folder in track contents,
listen to each take and eventually select the one you want to keep.

An update, I found exactly what I was looking for by highlighting a track,
clicking editor, and goint to the piano roll and finding the piano roll
layout. In there every note in the sequence was nicely labeled for me.
It did solve a couple of mysteries for me, the song I was working on had a
couple of incidental sharps thrown in. It did not however solve the mystery
of why I’m more relaxed and hit the right notes when I’m fooling around and
not recording, then when I think I’ve got it I hit record and suddenly all
the energy and life is sucked out of my fingers.
