Only issue now is the recording. Sound is clear, practicing and recording in
cycles is all good, the issue is now that I can hear my recordings I can tell
how much practice I’m not doing. That metronome is a harsh master, and unlike
a live setting where I can drop out and count myself back in without too many
people noticing, that recording catches everything.

under the record menu you can select how many bars you want as a count in.
i suggest recording a few takes with your bass then check the track contents
that the takes have been recorded in the take folder for that track.
it will be useful to turn the metronome on while you get used to this so you
are sure you are only hearing the number of bars you want to cycle.

the cycle region. I selected a region and hit cycle, when I played it it
nicely repeated itself so I could practice, but it gave me an extra
measure. It gave me my two measures that the region consisted of, but then
the cycle gave me measure 3 before going back to measure 1. Is this normal?

in gb preferences under general select to create take s with each pass
rather than merge. you have options for this when cycle is on or off and
refers to software instruments, it should show similar for audio
instruments.
each cycle should create a new take then in the track contents under each
track you are presented with a take folder from which you can select which
take to hear and you can delete those you don't want.
gb gives far less options

I kind of understand that cycling a region makes it repeat, how does this
effect recording? If I have an 8 measure drum region and I want to repeat
it while I record my bass part, if I cycle the region can I play the part
over and over again until I get it the way I like it?
