To reiterate, with the on-screen braille keyboard displayed, a
three-finger left-flick will toggle through the three braille input
options. The options are: six-dot, eight-dot and contracted.
Thanks for the tip, It's a much quicker route to a selection than mine
earlier which now seems quite needlessly ponderous. I ought to Google
for a repository of these handy shortcuts. If I should find one I
will post a link here; otherwise I think it would be worth compiling
and publishing a list on the web.

I've just played with it myself in notes. You can certainly produce
