OCR, or Optical Character Recognition, is the process of turning an immages into understandable language characters. Just like your brain does if you can see with your eyes, these programs have to learn what new characters are and they usually make a few mistakes if the immages is smuged, not from a language they recognize,, or not a symbol they recognize, Consumer OCR, can't understanding handwriting and has trouble with certain types of high gloss papper. A good ocr program is OmnyPage pro or if someone else is purchasing it for you and you are not comfortable with Windows, Openbook. Openbook uses the numpad for all the scanning functions and automatically scans and reads the pages using your synthesiser. OmnyPage can be configured so you can use a wordProcessor open up a blank document, and choose an option from the file-Menu which is called something like aquire text or scann immage.Aditionally, with any OCR program you may scann immages and read later after saving to a file, scann the immages at once and perform OCR at a later time on all of them, or scann the immages and not perform OCR. You may choose to leave tables formating and graphics in the document or remove them from the scanned and recognized page. You will have to modify the scanner and OCR software settings for it to perform with differing fonts, papertype, formating etc. Good OCR products allow you to modify contrast, have automatic orientation(place the page upsidedown and read it writesideup), and change the brightness for reading darker or lighter text. They may also have a proofread function and a training file where you can teach it what certain immages are. However, I don't see how that is usable by us blind folks. Any scanner will work some may work better then others. Not every OCR product will work well. Avoid paperport at all costs because the interface is shere crap and that's not just an opinion. The Visioneer or HP scanners which are frequently bundled with this junky stuff work fine using any ocr product.
