PDF files and weird problem with text seeming to appear vertically

Hello.

I've noticed this with a seemingly large number of pdf files. I wonder if it has something to do with the "document processing" for accessibility feature? Essentially what appears to happen is that the text of a document turns "vertical", so that each line contains a single word, and using the down arrow appears to move the cursor one word at a time. If I convert the document to a text file, it ends up looking the same way...words just seem to cascade down the page in single file rather than displaying in the standard and sensible horizotnal way. Could somebody explain why this irritating phenomenon is taking place? I do not believe for a second that this is the actual visual appearance of these documents. Is there an easy fix for this? Surely others have encountered this too?
