Dean,
I've long been familiar with the Insert menu and its Date and Time item. 
But I'm not clear about what you're saying below.  Do you mean that if I 
first open the Insert menu and choose one of the available date and time 
formats, and hit enter (thus placing it on the screen and in the document), 
after that if I use the hotkey combo you suggest, the day's date will be 
inserted in the open document at the cursor position, and always using the 
same format that I used by pulling down the menu?  Until I pull down the 
menu again and change my preference?  Is my question clear?

the keystroke is alt-shift-d.  You go into the insert menu, date and
time, alt-i, t, to set the date format.
