Other listers are more qualified than I to answer your legitimate query, but I think of the distinction this way. HTML enables you to format text, such as with underlining and italics. Those tools are grayed out in the file menu choices when plain text is checked.

As I said before, my reason for selecting plain text is that I have a couple of partially sighted friends who find it easier to read and work with plain text. I ought to be able to tell you why, but I've forgotten. If I can get a better explanation of this angle, I'll follow up, but I predict other listers will do so first.

To answer the last of your questions, you can tell OE to send email in plain text or HTML by starting a new message and, while in that message, going to the format list in the file menu. You'll see the relevant checkbox.

As for OE window maximization, I remember encountering this problem in the past and being told by FS that it can't and won't be done. As you also seem to, I find I often need to maximize my edit window in order to read back what I've written.

Incidentally, as other listers have recently noted, there are several advantages to sending email in HTML. However, because I have partially sighted friends who have an easier time with plain text, I've made that my default. Even with plain text, I've had no problems creating links.
