Yes, Jaws is quite accessible with skype. However there are some scripts
available from dlee.org that make skype more accessible.
As far as recording with skype, I use call graph. It is available from
http://callgraph.biz/
You will need to allow call graph to use skype, however, and this is done in
the skype menus.
There is a Skype English list for people who use screen readers. It is
available through google. You will get much more help on that list, since
it is a specialty list for skype.
