Too set a hot key for JAWS, is not that difficult.
Firstly from the desktop, move to the version of JAWS you require.
Press ALT + ENTER to open properties.
TAB to where JAWS announces hot key.
press the key sequence you require, then keep pressing TAB until "Apply", 
press ENTER, then you will need to press ENTER again to close the dialogue 
box, and save the changes.

Too set the version of JAWS you wish to have running at startup.
in earlier versions of    JAWS open the JAWS menu move to Basics, and TAB to 
"Run jaws at startup".
latest versions.
most likely the easiest way to do this, would be to use the wizard.
open the help menu, and arrow to start up wizard.
simply follow the prompts.
