First step is to find out what your connection limit setting is; the
default is 160.

It's under General, Client Connection Settings. 

How much spam to you get in an average night? Is your Exchange server
sending out NDR on those that failed delivery?

Brand new ISA 2004 SP1 server was deployed this week, replacing an ISA
2000 server.  Her first night on the job was apparently uneventful,
except for an event she logged at 2:34AM regarding the maximum amount
of connections had been exceeded from the Exchange/DC server on the
LAN.  Any suggestions on how to locate the problem without A) leaving
a packet filter running all night b) waiting at the console until 3AM?

I do not believe there are any jobs scheduled to run at that time
which would create an excessive (whatever the ISA 2004 SP1 defaults
are) amount of network traffic towards the ISA server.
