before the present backup. Assumption is that no employee will be
absent for so long!

I'd suggest configuring your email server to send a copy of EVERY
email to a particular address (big brother is watching you ;), and put
up a procmail/maildrop filter to drop these trivia emails. Then later
on backup the entire mailbox for this ID.

You don't have to change anything client-side if you do it this way.
