Chicken And Mushroom Risotto


The advantage of this recipe is that you can change the vegetables to fit your 
own tastes.  You can also add other ingredients like bacon.

Serves 4

Ingredients:
100G rice
half an onion, chopped
quarter red pepper,chopped
quarter green pepper, chopped
80G peas
50G mushrooms
75G chopped cooked chicken
25G margarine
200 ml chicken stock
salt and pepper
1 desert spoon of parmesan cheese

Method

1.  Melt margarine in a thick-bottomed pan.

2. Soften onion without colouring, add peppers and rice.

3.  Add the chicken stock and season.

4.  Cover and simmer for 10 minutes.

5.  Add the chicken, mushrooms and peas and continue to cook until the rice 
absorbs all the liquid.

6.  Fork through 1 desert spoon of parmesan cheese.
