Recipe for scones... Makes around 10 scones... 8 oz of self raising flourpinch of salt3 oz of butter or margarine1 1/2 oz caster sugar1 large eggmilk (optional...) 3 oz of cheese or sultanas Pre heat-oven to gas mark 7, 425 degrees farenheit/220 degrees centigrade. Sift flour and a pinch of salt into a mixing bowl. Add butter/margarine which has been cut into small pieces and using fingertips, rub gently into flour until mixture resembles breadcrumbs.Add caster sugar and mix in well using a spatula. If using cheese or sultanas, add to mixture now and mix well.In a jug, beat egg together with two tablespoons of milk.Add this to the mixture above and mix well using the spatula. When it comes together use your hands. It should be soft. If dough seems a little dry, add a little more milk a teaspoonfull at a time and mix well. The dough should come together nicely and leave the sides of the bowl clean. Shape the dough into a round and place dough onto a lightly floured work surface. Flour the rolling pin and lightly roll the dough. Take care not to roll out much. One inch thick is ideal. (This is the secret to well risen scones.)Using a two inch round pastry cutter, carefully cut out the scones taking care not to twist as you cut out. Continue until you have used up all the dough. Gather all the trimmings together and roll out and cut out the remaining scones. Lightly grease a baking tray and then dust with a little flour and place each scone onto the tray leaving a space all around each scone to allow for rising and swelling. Brush the tops of all the scones with a little more milk to give a nice glazed finish.Bake in a hot oven for approx 10-12 minutes or until well risen and golden brown. Once cooked, carefully remove each scone using a palette knife, and place onto a wire rack to cool. If you want to, you can slice the scones and add a little butter or in the case of the fruit scones, you can add jam on one half and either freshly whipped cream, or clotted cream on the other half, and then sandwich together. Enjoy. Once cooled, you can then freeze them in a plastic box.
