forward mails to another server

Dear all,
I have exchange 2000 domain, need to implement new exchange
server 2003 domain and I want keep existing domain name (there is no
interaction between 2000 & 2003 domains, these are two different forest
no any kind of connection internally), first I want to move few users to
new domain. Then I want to forward mail which coming to 2000 server for
move users, to new 2003 server.
Any one can tell me how to forward mails to new server?
