Adam,
You need to increase the number of messages required to form another
association.
It's a site based property, so site -> configuration -> mta site
configuration -> messaging defaults and increase the threshold (msgs).
This is the number of messages before it starts another channel. E.g.
if you have 150 messages queued and the threshold is 100 it will use 2
channels (+1 for important messages). Up to a max of 9 (+1).

Secondly, reclaiming lost space in the store - is defragmentation the
only option?
