If you are looking for a simple low cost, but not free, solution check
out: http://www.advsoft.info/. I am sure there are other low cost
solutions, I just came across this one and it did what the customer
needed for a few hundred dollars.
There are many Exchange reporting software packages out there that do
much more that cost $1,000s but the one above starts at $199 for 25
mailboxes and $499 for an unlimited amount. Since it just reads in the
message tracking logs it probably won't' scale to medium and larger size
orgs.

Hi everybody,
Are you guys aware of a tool that counts all the incoming/outgoing
e-mails for an Exchange organization?
It will probably count all the e-mails from the transition logs or from
the Message Tracking logs.
