If it's breaking everyday at a specified time, I guess would be that theres some script running that's stopping the application from processing. I'm not an IIS guru, but something like this would prob be easy to setup. Check to see if there are any scripts running between these hours. You can also try re-creating the Exchange virtual directories in IIS, takes only 5 minutes to do, it'll reset them to it's original setting. Here's the link.
