Mail Forwarding (relay) From SBS 2000

I need to be able to forward mail sent to a particular Exchange recipient
running on SBS 2000. I know that mail relay is dissabled by default, my
problem is being able to forward mail from any source for this particular
recipient to a different external domain without opening up Exchange to
3rd party open mail relay (hope this makes sense) any advice would be much
appreciated.
