Create a contact with the address they want thier mail forwarded to then set 
the delivery option on thier mailbox to deliver also to this contact.

Hello everyone.  I have 2 users who want to have their exchange mail sent
to an SMTP address while they are out of the country.  Isn't there a way
to create a custom reciept or something to handle this?  I think I have
done this before but it has been awhile and can't remember how it was
done.
